If working for a worldwide big company in the UK which has branches worldwide, and they offer an employee a transfer for 6 months to work for their Canada branch,
Then while in the UK, the salary gets paid into a uk bank account,
but when there in Canada for the 6 months, how would the income salary be paid?
Into the same UK bank account? - but the income would be in a different country/ and if they needed Canadian dollars to use as a monthly currency for their personal expenditure?
so while in Canada, how would they be able to utilize these funds?
or does the worker get an 'allowance' while working there for the 6 months?
How do big companies usually do this income structure ?

It depends entirely on what arrangements the employer puts in place. For a six month transfer I suppose they could do it either way.
When I was sent abroad for 6 months I was still paid in the UK. I didn't bother opening a local bank account and I simply used a Halifax Clarity Credit card to withdraw cash and pay for things (as that card gives you a near perfect exchange rate and, unlike most cards, doesn't add a foreign currency charge). I suppose renting accommodation could have been a bit more tricky without a local bank account but it wasn't a problem for me as my employer covered the accommodation.
When I was sent abroad to a different country for 2 years, by the same employer, I was then paid locally in local currency, so I opened a local account.0

Couldn't you just tell the finance department the new banking details?
I suppose it depends on whether you're still paid in GBP , CAD which they convert to GBP and then pay you or plain old CAD, pure CAD would be preferable.0
