I have been MIA due to work load and having a health scare but I'm back and need to get back to planning my meals! It is the last week before pay day to supplies are getting light.
I hope everyone is well? :j
Sunday-Mince and vegetables in gravy with mashed swede and yorkshire puddings ( I only make these about 4 times a year as a treat)
Monday-Pork and chick pea curry.(Home bargains has chick peas for 23p
)
Tuesday- HM burgers with stir fried mushrooms and garlic bread
Wednesday- Wraps made in to pizza
Thursday- Steak with stir fried veg
Friday- Jambalya- I have a few chicken drumsticks in the freezer I can shred)
Saturday-Get paid Friday so I'll grab something then.
I've got HM yoghurt with oats and dried fruit to make over night oats with for breakfast. A rep gave me loads of cashew milk so I'll use some of that as well.
Lunch I need to make fridge bottom soup today and I'll make some wraps as well. I think I have a tin of corned beef so I can also make a pie if I get time.

What's going in your fridge bottom soup?! I've got some green beans, mini sweetcorn, bits of peppers left over, cauli - have a courgette but last time I added that to soup it gave it a strange sour taste so I'm not putting that in!
This week going for:
SUN: everyone's out for lunch at sports things so I'll forage...
Chicken dinner with Yorkshires etc.
MON: Pasta bolognaise with HM garlic bread
TUES: Nando's marinaded chicken with HM savoury rice
WED: Sausage casserole and baked potatoes
THURS: HM chicken pie with potato wedges and peas for kids, green Thai chicken curry for the adults (Sainsb thai sauce, coconut cream from a hard block so it keeps for ages, mix with hot water - add chicken, mini corn, green peppers or green beans)GC Feb 2019 (to 10th) £397.07/£3000 -
Right - a new week... When did that happen?
Breakfasts - we're switching to porridge as it's getting chilly. Likely with banana and sultanas
Lunches - I bought miso paste and tofu, so miso soup (sugar snaps, baby corn, bamboo shoot, seaweed, mushrooms, noodles - maybe some water chestnuts if i've got any left).
Dinners:
Monday - Pork chops with cajun sweet potato and carrot/broccoli/ baby corn
Tuesday - Pork chops and savoury rice
Wednesday - Roast chicken dinner
Thursday - chicken fajitas/ chicken burritos
Friday - Salmon en croute (lazy style)Almost everything will work again if you unplug it for a few minutes, including you. Anne Lamott
It's amazing how those with a can-do attitude and willingness to 'pitch in and work' get all the luck, isn't it?

My meal plan started yesterday. I am vegetarian, but the rest of the family are not, so there is a mix of veggie and meals that can have meat added. We will be having in no particular order:
Broccoli pasta bake
5 a day (veggie) tagine with couscous
Pea and bean tortilla with potato wedges for me and hubby (boys to have chicken goujons)
Vegetable curry and rice
Butternut squash, leek and tomato risotto
Creamy mushroom spaghetti (added bacon for boys)
Shepherd's pie (veggie for me)£1000 Emergency Fund #175 - £598/£1000
PAYDBX 16 #134 - £2139.00/£6961.85

5 a day (veggie) tagine with couscous
Suddenly wanting to add this to my planner for next week.
hmm... BN squash, sweet potato, chick peas, tomatoes - that's only 4 a day... what am I missing?
Thinking I could add peppers, courgette and aubergine.
Seasoning wise - I've never been able to find harissa paste so I just use garlic, coriander and cumin (sometimes a dot of cinnamon) - do you use anything else?Almost everything will work again if you unplug it for a few minutes, including you. Anne Lamott

I find a tin of tomatoes gives it a good base, then whatever veggies you like. The spices I use are cumin, paprika, cinnamon and chilli powder. You could add spices to your own taste.£1000 Emergency Fund #175 - £598/£1000
