Vegan Slow Cooker Ideas

I'm a chef but I'm totally new to using a slow cooker and I was wondering what meat free stuff I can make that won't turn to mush? I'm sure you folks will have some great ideas. So far my wife has made some chilli and a tomato ragu in it but I haven't had much success

A slow cooker just cooks things low/slow... so anything you'd simmer in a saucepan for 2-3 hours, or leave simmering in an oven for 2-3 hours, would be a good candidate.
As a vegan you can't eat anything anyway .... so it'll be "what can I do with 3 carrots and a spud" really won't it0 -
You can do loads of stews and just add some tinned beans at the end of cooking.
Or a ratatouille thing.
Chickpea, spinach and potato curry. (Any curry really).
As well as a spag bol, chilli, lentil dhal, corn chowder, braised tofu, soups, saag aloo.

Hi! I'm veggie, not vegan, but often find I end up making things which are vegan anyway.
One of my favourite things to make in the slow cooker is lentil Dahl. I can't post a link to the recipe I usually use as I'm new to these forums, but there are loads of recipes out there. I don't bother with frying the onion etc beforehand, just whack it all in (except spinach if you use it, which gets added at the end) and cook for at least 4 hours.
I also make loads of soups in the slow cooker - lentil, butternut squash, pumpkin at this time of year - pretty much any veg really!October Grocery Challenge: £107.95/£3500
