I currently work on a night shift and I'm down to work every other Saturday. Although I've not worked one of the past 9, being swapped out of 6 and on holiday for 3. I'm wondering if I'm able to swap out of saturdays permanently as I've not worked one for 20 weeks

Unlikely I'm afraid unless you employer chooses to agree.
You would struggle to argue that your contract has changed based on what you have said here.0
