cheapskate stock - soup recipe request

My OH has just decided that he would prefer to only eat organic veg as it tastes better - to a point for some of this I do agree - this has starte from my own foolishness in buying a bag of organic sainburys carrots from the sale bin, - I agree they were wonderful I started to scrub them and my whole kitchen smelt of carrot - wow. However at the shock of buying 6 portions of boiling pots yesterday for £2.00 (bout 40p a head compared to sack from farmshop approx 8p a head) something had to be done.

I now have a stock box! I peel mushrooms and all veg peel tops and tails go in, and I freeze or fridge it as appropriate. Once a week I will make soup, save the bones and bits from all meat and I will recoup at least some of these costs.

Now has anyone got some fab filling soup recipes - I have lots of dried kidney beans, chick peas, mungo beans, black eye beans and lentils of every colour! (Im thinking soup as a main meal 1 - 2 times a week)

    Hi vij,

    My favourite main meal soup has to be Delia's Minestrone soup. I use fusili pasta shapes instead of macaroni, courgettes when they're in season and just top with cheddar cheese instead of parmesan. Serve it with homemade bread and it makes a really filling meal which the whole family love.

    Sorry, I tend to get a bit carried away:o
    Best soup to make from home made stock us "storecupboard" soup.
    Recipe:
    Open storecupboard/veg store/fridge/freezer
    Choose what you like or what you want to use up
    Chop/grate as necessary
    Cook it in the stock
    Blitz or leave chunky as preferred
    Serve

    try having your organic goods delivered from www.abel-cole.co.uk they deliver free anythng from fruit to wine, they take the delivery boxes back next time so less rubbish for the bin!
