recipe for truffles & freezing question

Hi there
I have a packet of ground almonds about to go out of date & I wondered about making some truffles & freezing them, would this be possible & if so does anyone have a recipe/tips ?

Quickly replying:
Basic truffle recipe is equal weight of cream and dark chocolate, and then things added. I can't think that this would freeze at all well.
However, I think that your ground almonds would freeze quite well for at least a few weeks.
Myself, I would think about using them to make shortbread, or at this time of year, a blackberry bakewell tart.0 -
We just made 600 truffles for our son's wedding on Saturday...we used Jamie Oliver's recipe, with Elmlea instead of cream as they have a longer life without the need to be constantly refrigerated.
