Hi
The background:
I was head hunted for my current role 14mths ago. 2 months after starting the job the owner of the company sold it to a multinational company.
The current situation
I have been asked to change roles, from a senior technical role to a more junior, less technical role, akin to a chartered accountant being asked to revert to being a book-keeper.
The company isn't performing poorly, they have recruited numerous people for different roles in recent weeks.The justification for me being asked to switch is they have a requirement for this role to be completed but they have no more budget for additional hires in my area of expertise.
I have offered to assist them temporarily, however, they have declined this and want to make it permanent. I have informed them that I have no interest in the role on a permanent basis as I will deskill myself..
I am aware that my rights are limited due to not serving 2 years at this employer, but I am curious if I have any?

They clearly have already decided to move you into the role permanently and the fact that they refused your common sense compromise suggests that there is no room for discussion.
On the assumption that you will be retaining your salary and benefits, If I were you I would accept the role for now and start looking for a new job.0
