Remortgaging - How important are your bank statements?

Evening Everyone
So, we finally think we are in a position to remortgage!!!
Currently including the remaining secured loan we have to pay off we would have an LTV of 83%. We have 1 credit card with a balance of 7.5k. We overpay our mortgage every month by 120 and have done so for atleast the last 2 or so years. We also are paying the credit card down and double the minimum payments at least each month.
Now here's the bit that worries me, we are currently saving and paying for our wedding. This means that on our last 3 months of bank statements we have transactions that are 'out of the norm' as they relate to the wedding. We also do an envelope system for budgeting via bank accounts so there are lots of transfers around our accounts. We do sometimes go into the overdraft but we are not permanently in it.
I do worry that our bank statements are going to confuse things and not represent our typical spending habits, so how important are our bank statements? Do we have chance to explain them?

We have just remortgaged with nationwide and we weren't asked for our bank statements at all, we were just asked to provide a breakdown of our outgoings.
