Looking for a vegan recipe...

We try to eat vegetarian twice a week, but end up eating a lot of eggs and cheese (a lot of cheese).
I want to try something vegan next week and I thought I saw a recipe for a bake that I fancied but now I can't find it.
I'm happy for recommendations for something else - this is what I've currently got in that I'd like to be able to use up:
Fresh Tomatoes
Leeks
Mushrooms
BN squash
I've also frozen spinach, peppers, onions - and obviously dried lentils/ pasta/ beans/ spices and the like.
The easy answer would be a spag bog, but I don't really fancy that...

It's amazing how those with a can-do attitude and willingness to 'pitch in and work' get all the luck, isn't it?
Please consider buying some pet food and giving it to your local food bank collection or animal charity. Animals aren't to blame for the cost of living crisis.

I went to a family friends house who are vegetarian and they did a couscous salad so I'm guessing you could omit the feta cheese and do a roasted vegetable couscous salad.

I would do a layer / lasagne type of dish by slicing and roasting the veges, layering with each other /pasta sheets and plenty of bechamel over the top.0

You could do a curry with all of that (use leeks instead of onions)
or fry it all up with olive oil, herbs and garlic, a veg stock cube and enough water/wine to make a very scant sauce and stir into pasta with lots of freshly ground black pepper.
Mix tomatoes, mushrooms and leeks (all sauteed) with cooked cous cous/rice. Stuff into BN squash and bake.
Leek and BN squash soup would be lovely. then a fresh tomato and onion salad with bread on the side?0 -
Could you make kind of a vegan flan, using mashed up butternut squash and the veg, instead of egg as a filling?0

I've roasted the tomatoes and got the leeks sliced ready to go in the slow cooker. Still not sure what I'm actually going to turn it into..I would do a layer / lasagne type of dish by slicing and roasting the veges, layering with each other /pasta sheets and plenty of bechamel over the top.
I'd love to do a lasagne, but can't think the sauce would be nice/rich without any butter/egg/milk/cheese - and I was really hoping to do this without having to buy much in.
I was actually planning on doing the lasagne style pasta bake from this last episode of eat well for less, so could add some of the veggies to that either way.
I'm starting to think a tagine might be the way to go for phase one of the vegan experiment - chunks of mushroom and squash with chickpeas and paprika/ cinnamon/ cumin - maybe pickup a sweet potato? Can't make it too spicy if we want the babies to try a bit.

Tagine sounds lovely. I make a butternut squash pasta bake that is vegan without the cheese, which I don't add to my portion anyway. It's very similar to this recipe although I don't tend to use exact measurements, just throw in what I have until it looks like it has the right amount of stuff.

I make vegan bechamel-style sauce. Classic bechamel doesn't include cheese anyway, and neither does true classic lasagne, so I treat cheese as an add-on anyway.
I always warm the milk (of whatever kind) with herbs & spices to add flavour.
I have also made a *lasagne* of this kind using tomato passata instead of bechamel.
I post this for the benefit of anyone looking through for ideas, as I think a tagine is a lovely way to use vegetables.0 -
I use nutritional yeast when we are having anything cheesy.
It can be made into cheese substitutes or just added in to things.
I don't eat dairy now so it is very useful for things like lasagna or cheesy risotto. You can find it on amazon but I expect health food shops have it too.0
