Potato Scones - yum

If you're scottish you'll love this recipe for potato scones. Just made a batch to use up some tatties. Yum Yum.
500g mashed potato
130g flour
6 tablespoons of melted butter
1 and a half teaspoons of salt.
Mix all together so you get a very soft dough. Shouldn't be too sticky, but be warned it is very soft. Roll out (you'll need flour for dusting so it doesn't stick) to about 7 mm think and then cut into squares or circles. Again, take care when lifting.
Heat a large frying pan and grease slightly with butter (you hardly need any butter - pan shouldn't be too hot either or it will burn them). Lightly fry scones on each side for about 2-3 mins. They should look golden brown.
And thats them. Allow to cool and then you can fry them whenever you want. Serve with your bacon, eggs and crusty rolls (glasgow folk know about morrisons crusty rolls!). They definitely taste far better when they have been allowed to cool and then reheated in a pan with a wee dod of oil.
