Morning :A
The how many do you get thread has inspired me to add more veg to our diets. This weeks plan will be veg heavy. I'm aiming for 3 in the evening meal as a minimum and 2 at lunch time, 1 as a snack or breakfast.
Sunday- Beef casserole packed with veg with new potatoes roasted with their skins on
Monday-Steak with sweet potato chips and stir fried mushrooms and onions
Tuesday- Chilli bulked out with lots of chunky cut veg over cabbage spaghetti
Wednesday-Salmon with creamy lentils and broccoli
Thursday-Turkey mince cheese burgers with stir fried veg and veg spring rolls (We don't eat bread much so I make these without a bun.)
Friday- Vegetable curry over cauliflower rice
Saturday-Pizza, the veg will be 1 the tomato puree, 2 onion, mushrooms, peppers and garlic. I'll do a side of coleslaw and salad to with it as the 3-4 depending on the weight when I make it.
Lunches will be soup or salads. Breakfasts will be home made yoghurt with oats and seeds added. I need to make a kilo today as we have ran out.
Shouldn't need to spend much this week except for fresh veg and milk. The freezer and fridge are groaning they are that full.

Last week working full days was a heck of a shock to the system.
I hadn't realised how used to the babies rhythms I'd become - taking time to eat lunch slowly, our pre-nap walks, nap time
I definitely think planning helped. Need to keep it up - and as you say Soworried - keep an eye on upping the veg content/variety.
As last week, I'm mornings Monday and Friday, and full days Tuesday, Wednesday and Thursday. OH is doing his usual 60 hour week and the MIL is looking after the sproglets for us.
Breakfasts are wheatabix and banana - if the weather starts to cool I'll switch us to porridge
Monday - dippy egg with the babies for lunch, and barbecue chicken with corn and stuffed roast bell peppers for dinner
Tuesday, Wednesday, Thursday - LO cold chicken with carrot sticks, baby toms, sugar snap peas, celery and either soft cheese or a spoon of mayo for lunch
Tuesday/Wednesday dinner - Tuna and mackerel pasta bake with a tomato sauce - broccoli, cauliflower, mushroom, spinach and salad.
Thursday dinner - pitta pockets - roast courgette, aubergine, apple, avocado, peppers, hummus and curried yogurt.
Friday - Omelette with the babies for lunch, and home made fishcakes with wedges and peas for dinner.Almost everything will work again if you unplug it for a few minutes, including you. Anne Lamott
It's amazing how those with a can-do attitude and willingness to 'pitch in and work' get all the luck, isn't it?
