Help! G/F vegan sponge recipe needed!

Hello,

I am about to bake the dessert cakes for my son's wedding, and have been told that there will be 2 vegan & 2 coeliac guests...they will all be on the same table (for the caterers benefit).

I found a g/f vegan sponge recipe, and tried it yesterday, but the result could be used as a door stop :(

Does anyone have a tried & trusted vegan sponge recipe that I can try with G/F flour, or even better a G/F vegan sponge recipe?

    sponge will be heavier, no two ways about it. I'd go for brownies. But you do need to buy a lot of specialist stuff; you may wish to buy the ready made ones from tesco and ice them yourself..

    If I'm honest, you might want to accept that making a vegan or g/f cake - or both! - is pretty thankless, and the result will never be as good as the traditional versions.

    I would either buy separate cakes from specialist bakeries for those guests, or create a completely different dessert for the 4 guests using coconut oil in this recipe (tried and tested from my vegan phase). Also can be made a couple of days in advance and the fried nut mixture added later. Restrict how much you make though, otherwise you'll be standing over a stove for ages.

    I've been Money Tipped!
    I've never perfected the vegan sponge - it's the lack of eggs that seems to do the damage.

    I've tried apple sauce, corn starch, vinegar, Ener-G egg replacer etc.

    I've decided that some things are just not meant to be :o.

    Looking forward to seeing everyone's recipes.

    I used this for half of my wedding cake (the other half was gluten free vegan rich fruit cake) The end result is closer to a Madeira cake in texture, but its tasty and not obviously either vegan or G/F. (One warning, make sure the baking Powder is Gluten Free)

    Gluten Free Eggless Sponge Cake
    4 oz Rice Flour
    2oz Cornflour (corn starch)
    4oz Powdered Sugar
    1 tsp Baking Powder
    1/2 tsp Bicarbonate of Soda
    100ml Soya Milk
    2oz Sunflower Margarine
    2 Tbsp Golden Flax Seeds
    4 Tbsp Hot Water
    1 tsp Vanilla Essence


    Mix together the rice flour, cornflour, powdered sugar, baking powder and bi carb.

    Add the margarine and mix well or rub together using your finger tips.
    Gradually keep adding the soya milk to the flour mixture.
    Mix well.
    Put 2 Tbsp of flax seeds into a grinder and grind to a powder.

    Mix 4 Tbsp of hot water into the ground seeds, mix well.

    Add the flax mixture to the cake batter and mix well for a few minutes.
    You should be left with a thick cake batter.
    Pour into a greased and floured cake tin.

    Place into a hot oven at 180C for 25-30 minutes or until golden and spongy to the touch.

    Do not open the oven for at least 20-25 minutes.
    Once cooked leave to stand for 15-20 minutes in the tin.

    (Only remove the cake from the tin once it has cooled down enough and will not break, think I left mine in the tins for about 40 minutes before removing)
    I made them 4 days in advance and they were still good two days after the wedding, I've since made and frozen several.

    Nuatha thank you! I'm making madeira for everyone else so this will be great :) Can I just ask what size tin you used?

    Thanks for the other suggestions - brownies would be nice, but not what the B&G want ;):p
