meal ideas suitable for OH to impress!

Hello you lovely lot, I'm sure you can help me!

I am going away on Saturday (going to be on tv!), and OH is entertaining some friends while I'm away.

I know they are into good food, and rather than just get a takeout, i would like to prepare a nice meal in advance, so that all OH needs to do is either reheat, or serve.

The problems are - 1. OH is useless in the kitchen:o
2. one of our guests doesn't do spicy food.

They come down a few weeks ago and I did a lovely cannelloni, so would prefer to do something other than pasta - any ideas??

I am going to be leaving about 9am, so could stick something in the slow cooker I suppose, but to be hoest would rather prepare soemthing tomorrow if poss.

    What about a fish pie served with steamed veggies? I usually use smoked haddock and cod when I make it but I guess you could add prawns and salmon if you wanted to make a luxury version. All hubby would have to do is take it from fridge and pop in oven.

    Tastes much better than it sounds and is sooo easy. I hate tinned tuna but LOVE fresh (for anyone who doesnt like tinned, kids thought it was chicken first time they had it)

    Recipe is for 2 people so need to double it.

    2tbsp olive oil
    1 med onion peeled and chopped finely
    piece root ginger (about an inch) peeled and finely chopped
    1 garlic clove peeled and finely chopped (can crush, will give a stronger flavour)
    12oz fresh tomatoes chopped
    1/2 tsp cumin
    2 tbsp fresh chopped flat leaf parsley
    1/2 pt fish stock
    8oz fresh tuna cut into chunks
    Boiled rice and part baked bread to serve

    Heat oil in large pan, cook med heat 5 mins until soft
    Add ginger and garlic cook 1 -2 mins
    Add tomatoes cumin and parsley. Cook stirring for 5 mins until tomatoes soften slightly
    Pour in stock bring to boil then reduce heat
    Cover and simmer 15 mins until tomatoes are soft and sauce is thick and pulpy
    Add tuna chunks, cover and simmer for 5 mins until tuna is cooked through
    Season to taste
    Serve with rice and part baked rolls finished in oven.

    You could make the sauce and just get hubby to chuck the tuna in, and if you get sachets of the 2 min rice (I find this better if put in boiling water instead of micro) hubby can just drain it.
