I will go against the tide here and say I find sainsburys baking margerine (block type) perfectly ok for pastry, shortbread etc, but i like stork the soft stuff for cakes. I have never found any kind of spread ie utterly butterly etc any good for baking as it seems too watery. I must say I do prefer butter in shortbread though.

I wonder if the increase in butter prices currently discussed on another thread at the moment will cause some of the 'butter ladies' to move over to Stork or Vitalite? Or perhaps make fewer cakes (in the case of my waistline no bad thing!!)We must not, in trying to think about how we can make a big difference, ignore the small daily differences we can make which, over time, add up to big differences that we often cannot foresee.

butter for most things, oil for muffins and anything not containing transfats/hydrogenated fats if i dont have butter in.- prior planning prevents poor performance!

I use stork for cake making and flap-jacks which I made this morning. Thats also used on OH's sandwiches. I'm odd and use Mayo as butter or whatever on sandwiches.0

I don't use butter or similar in my sandwiches either, use mayo, or sauce, I vaguely think of it as calorie saving. I don't butter toast either if I'm having something on it eg beans
Out here in Spain it fairly commonpplace for the locals not to use butter in sandwiches, they tend to use a thin spread of skinned mashed up tomatoes0
