Rules on using more than one email addy

normally what are the rules of using more than one email addy when entering competitions, is it just something that is frowned upon?

It would depend on the terms and conditions for each competition. On the whole, it is more likely to be one entry per person than one entry per email address, but you would need to check each one you entered.

And if you don't check and have already entered 3+ times with different addys but same name does that count as a disqualification?

It may or may not. There are different rules for each competition, not one common rule.

Your entries will be IP tracked - so they can see if you have entered multiple times using different email addy's.... and if stated in the rules, can be disqualified for doing so

I wouldn't say it was worth even bothering. You're gonna end up spending loads longer comping and you might have your entries disqualified for it (if the terms state), so you'll be putting in more work to potentially have worse odds of winning.

If you are allowed more than one entry there is no point in using multiple e-mail addresses to make them.
