Lentils, lentils, lentils!!

Me and OH are both vegetarians and we eat a lot of lentils, beans and chickpeas. I only ever buy dried - I buy quite big bags in indian supermarkets - as tinned work out quite a bit dearer.

One of my absolute favourite recipes is Delia Smith's egg and lentil curry which is easy to make and gorgeous.

I use lentils in things like shepherds pie. Sometimes I mix them with Quorn mince but often I just use lentils and lots of veg mixed together. I also use lentils for bolognaise, again either with veggie mince or on their own. I also put them in my veggie stews

Lentil dhal, lentil soup, lentil fritters, lentil and mushroom pate are all really delicious.
