I remember reading that depending on how/when the interest is added to your mortgage then it works out better if you make overpayments at the right time
what do I need to find out so I can work out when the best time is?

Sooner the better for just about every mortgage these days.
Paying it too early only loses money if the money is earning interest elsewhere.
Nationwide is daily interest so as soon as you have the money use it, as long as no fees.0
