    Thanks a lot for your amazing responses!

    It has just occurred to me that one of the reasons that I have been struggling so much, is that I can only eat little and often, and so rarely eat normal-sized meals (dinner last night was basically a vegan crunch corner yogurt - but supper was cereal). This is in part due to a medical condition, but its not something I consciously do and hence forget it is an issue. I basically sit at my desk eating all day, so a lot of the food I buy includes food bars etc.

    This leads to so much waste when cooking. Saving food for another meal is definitely something I need to practice :). Making lots of snacks and eating them throughout the day would work really well for me.

    Also thanks, FairyPrincess. I eat a lot of those recipes, although I never cook them myself. Guess I should learn!

    I have decided to hold-off buying the freezer until I move though. They seem to be £70-£100 which is counter productive if I only need it for a few months.

    Nixia try baby steps first. Use jarred and packet sauces until you're in a routine of cooking. If you need to eat little and often, then I'd suggest trying to supplement some of your snacks with things from discount supermarkets. You could make up a batch of flapjacks at the weekend, get some nuts (Aldi's tend to be reasonably priced) and similar. Bars are particularly expensive, so it might be worth trying to replace some of those with alternatives to limit the cost.

    However, log onto freecycle, streetlife or gumtree to pick up a cheap or even free counter freezer.

    As you are based in London - most areas have indian, chinese grocers/supermarkets where you can buy lots of cheap veg and lentils etc..Curries are the easiest to start off with and once you get the little freezer - can be frozen as well.

    I cook a double portion of whatever I am cooking, so the second portion is lunch the next day. So if your workplace has a microwave - this is the way to go. Can save you loads of money too.

    Cous Cous is another good way to go, if you don't have a microwave at work.

  • There is a book called "Vegan Cooking for One" by Leah Leneman that has shopping lists in it. None of the recipes are difficult, as I recall.


    If little and often is your thing then consider things like beans on toast, avocado on toast, tofu scramble - none of these things need to be expensive.
