I'm trying to use up everything in my freezer as it could do with a good defrost and start again.
I've come across a bag of frozen courgettes... Anyone have any great recipes that could help me to use these up? Otherwise it will be meat and courgette for the next week!
Edited: Also have a lot of frozen sausages to use up.
It's just me in the house so any bulk meals will need to be freezable to be eaten within a week or so.
I'm on a very tight budget this month, so preferably recipes that are budget friendly or use cupboard staples.

I've tried courgettes stuffed with rice and cheese, they were really nice. I didn't have a particular recipe, I just used a packet of savoury rice plus some chopped veg and cheese.0 -

Courgettes make lovely roast veg with couscous.
Chuck 'em in a roasting tray, add any other veg you have hanging round (tomatoes are yummy, garlic, onion), bit of olive oil, salt and pepper and bung in oven on mid/high heat for about 30 mins.
Near end of cooking time, make up some couscous (I add a chicken oxo to the stock), mix together and serve. Yummy.:mad: :j:D:beer::eek::A:p:rotfl::cool::):(:T0 -
When I have lots of courgettes from my veggie patch I slice them then freeze them and then when I have bag full I make soup.
Its really easy - just chuck them in a pan with a chicken or veggie stock cube and cook until the courgettes are soft and then blend them with a couple of cheese triangles.

This uses courgette, aubergine, onion, red pepper, yellow pepper. Yummy with some noodles.0
