yep, wipe with kitchen paper while pan is still warm, its excess water and salt that make this cruddy mess. x

    Its a tefal non-stick pan.

I used bacon as the example but it happens when cooking steak or pork chops too. I only use a dash of olive oil when cooking, and cook the steak particularly on a very high heat.

I can't grill because I only have a single combo oven / grill.

I'll try the kitchen paper thing thanks.

It's rare that anything should be cooked on "very hot". I'd do it at 75-80% of full. Takes a bit longer, but less chance of the food/oil burning.

It's just the fats off the meat cooking/burning on the pan. Fattier meats like bacon and pork chops will be more noticable, but it can happen with chicken etc. too.

It's fat, hence it will stick to the sponge. Wiping with kitchen towel will get the majority of it off, to go in the bin, rather than on your sponge or down your drains.

Any recommendations? Ive tried plain vegetable oil and sunflower oil but both smoke badly.

    Anything else seems very expensive.

Rice bran oil is good for high temperature frying.

First thing - Always season the steak, not the pan

    I use melted salted butter

Secondly - use neat washing up liquid - no water (just a dot is enough) - directly on the pan

scrub it round to coat and lift the fat then wash off in hot water

Lifts the grease and means your sponge is washed at the same time as your pan

It's amazing how those with a can-do attitude and willingness to 'pitch in and work' get all the luck, isn't it?
