Hummingbird is indeed both expensive and really only suitable for largish numbers, but does look magnificent for a "do". I have kept the cost down by using a lemon drizzle icing on the top instead of the cream cheese usually recommended - that makes it good for dairy-free as well (which i often have to take account of)0

Hi I use this recipe and make it gluten free using doves farm self raising flour. It gets requested for every birthday and celebration, it is light and stays moist for a few days which is rare for gluten free! Can't remember where the recipe from;
For 2 X 7 inch pans
175g Sr. Flour
2 tblsp cocoa powder
1 tsp bicarb
150g caster sugar
2 eggs
150ml sunflower oil
150ml milk
2 tblsp golden syrup
Frosting
150g softened butter
175 icing sugar
3/4 tblsp Cocoa
Grease and line the tins. Oven on to 180 (160 fan) Mix dry ingredients in a bowl, then in a jug measure oil then milk then add eggs and golden syrup, mix well then add to the dry ingredients. Mix well then pour into the tins - the mix is very wet but have faith! Place in oven for 30-35 mins, this will depend on your oven. When done, testing as usual, remove from oven and leave to cool slightly in the tins before turning out onto wired rack. The cake is super light so don't be alarmed. When completely cool mix up the frosting, put some in between the sponges and cover with the rest! Yummy
I have adapted the recipe for 2 X 8 inch pans if you need but this makes the cake slightly bigger which is very impressive for celebrations but might be a bit much for everyday lol!2019, move forward with positivity! I am the opposite of Eyeore :rotfl:0 -

I have some recipes for cakes with oil in. All are lovely when baked, but licking out the bowl never seems as appealing. Suppose that's a good thing for my dietZebras rock0
