Best way to cook chicken breasts

I chargrill mine, I put them in a bag, flatten them with a rolling pin and chargrill. I sometimes marinate first, although lately I have been giving them a squirt of clover chilli or garlic. They cook quickly and as someone else said you can check by cutting them.
I also cook them in the oven, in a roasting bag or stuffed with goats cheese and wrapped in bacon.0 -
Either grill or poach
Poach in water seasoned however you like either in the oven covered in foil or in a pan on the stove - low simmer
Grill by butter flying the breast first then battering it out so even thickness. Flavour and grill for a few minutes each side
Chargrills are made out of reformed chicken so a lot of other things added to glue it all together0 -
When I'm just cooking for me, I often cut a chicken breast into strips and stir fry with other stuff like mushrooms, onions etc. Add a bit of soy sauce and on a high heat, as long as you are moving the strips around it takes no time.
And the chuck stays nice and moist too. Which can be a problem with a chicken breast done in the oven.0 -
I often split the chicken breast so that it is flatter then place a wedge of cheese in the centre, wrap the chicken around that and then wrap the whole thing in bacon. Generally cook for around 25 minutes and then if I am not sure things are cooked through I cut the whole portion in half to check. Wrapping it in bacon keeps the chicken moist and it is a very tasty meal with roasted veg (potatoes, carrots, parsnip, etc) which cook at the same time. To make really good use of the oven try cooking a pudding at the same time - perhaps a fruit crumble or apple sponge fo example.0
