I've been making my own curries for a little while now, but would like to add a few more to my reportoire given my recent refocus on saving cash.

Has anyone get any suggestions as to what comprises some fantastic asian foods? In particular, how do take aways get that fantastically thick paste style sauce?!
Almost debt-free, but certainly even with the Banks!
