HELP!!! Chocolate mousse or cheesecake receipes!!

People coming to dinner next week and everyone I've ageed to do cholate mousse or cheesecake for desert and I have no idea how to do these:eek: :eek: , any receipe ideas very greatly welcomed.

  • Baileys cheesecake is lovely & easy to make.

    For the base: Mix together crushed digestive biscuits & melted butter. Put into serving container(s). I usually refrigerate the base before I add the topping.

    For the topping: Mix together a tub of philadelphia, a tub of double cream & some icing sugar to taste. Add Baileys to taste. The topping should be quite thick but it will set slightly in the fridge. Pour onto the base & decorate with chocolate curls or flake or whatever you fancy.

    Proceed to lick mixing bowl........

    I always use Delia's chocolate mousse recipe as it is so simple to make and can be very easily adapted for the number of guests.

    Basically use one egg and 2oz chocolate per person (good quality dark chocolate).
    1. Break the chocolate and carefully melt it in the microwave (I always do
    this on my 30% defrost programme to make sure it doesn't burn).
    2. Separate the eggs and when the chocolate is melted add the yolks to the
    chocolate and beat in (the warm chcolate slightly cooks the eggs) and
    leave to cool.
    3. Whisk the whites until stiff and fold little by little into the chocolate mix,
    keeping as much air in the mousse as possible.
    4. Transfer into a serving bowl/s and refrigerate.

    This works every time and is soooooo delicious:beer:

    I do a plain cheesecake, no fruit, then I melt a couple of small toblerone and swirl it through the cheescake. Delicious and a nice crunchy texture when you get a small chunk of chocolate.

    I did this quick chocalete mousse for a friend's dinner party yesterday. It is very easy to do, but very very rich. In fact I couldn't eat most of mine last night, but have just finished it off now with some banana...delish

    Although the mix was quite liquid, when mine set it was almost like a soft fudge, rather than a light fluffy mousse.

    Daughter has made 'Nigellas choc mousse' for pud tonight it was very easy! Taste test around 6pm will let you know how it tastes later
