Cauliflower Rosti pie
A bountiful bake of tender cauli, juicy tomatoes and melting cheese in a crisp potato crust.
Ingredients
700g potatoes, peeled and coarsely grated
Salt
2 egg whites
1 onion, coarsely grated
Low calorie cooking spray
Steamed green beans, to serve
For the filling:
1 onion, finely chopped
3 garlic cloves, finely chopped
800g cauliflower florets, roughly chopped
150ml vegetable stock
1 tsp dried mixed herbs
A small handful of fresh flat-leaf parsley, finely chopped, plus extra to garnish
120g Red Leicester cheese, grated
200g cherry tomatoes, halved
2 eggs, lightly beaten
1 tsp sweet smoked paprika
Method
Preheat your oven to 200°C/180°C Fan/Gas 6. Place the potatoes in a colander and sprinkle lightly with salt. Set aside for 10 minutes, then squeeze out the excess water.
Mix together the potatoes, egg whites and grated onion. Spoon into a 22cm rectangular pie dish and spread out evenly, lining the bottom and patting the mixture up the sides to make a ‘crust’. Spray lightly with low calorie cooking spray and bake for 15-20 minutes, or until lightly browned. Remove from the oven, cover with foil and bake for a further 15-20 minutes.
Meanwhile, for the filling, spray a large frying pan with low calorie cooking spray and place over a medium heat. Add the chopped onion, garlic and cauliflower, and stir in the stock. Cook for 10-12 minutes, or until the cauliflower has started to soften. Allow to cool, then stir in the dried herbs, parsley, half the cheese, the tomatoes and the beaten eggs.
Remove the pie crust from the oven. Spoon in the cauliflower mixture, and sprinkle with the remaining cheese and the smoked paprika. Bake for a further 25-30 minutes, or until lightly browned. Also on the subject of ebay we went to take the recycling to Sainsbobs yesterday - our sainsbobs has as well as the usual suspects, Oxfam cloth recycling bins, plastic recycling and Oxfam book bank so its very convenient to take everything at once.
Very oddly people seem to leave random other things there as well - its not close to a car boot sale so its not items that didn't sell and anyway its usually mid week when we go. And these items are very random.
Quite often there are books in perfectly good condition posted in the cardboard recycling so we fetch these out and put them into the book bank - perhaps people don't notice a bright green bin.
Last week we found a marks and Spencers Christmas musical biscuit tin which is going to be my new sewing box.
Previously there was a new very long length of hose pipe so OH collected this and got connectors and he can now hose down the cars around the front of the house using the outside tap by the backdoor.
Also white straw baskets just left behind the bins, again new these now house the toiletries bits and pieces and these were perfect when the en suite was revamped.
Another time it was a collection of small children's models like the incredible hulk and my little pony which looked new but I washed them anyway and these will go into the Christmas shoe boxes.
Yesterday we found a brand new, unmarked dressmakers dummy so after a bit of dithering we took it apart and got it into the car and I can now use it to display clothing for ebay sales pics - I like to do them in the garden but most days its raining or windy so I end up not bothering to list anything as I cant get good photos - so this is a problem solved :j

Sealant is as tough as old boots...choose a colour that matches either the wall colour or the worktop colour and away you go....some of them have very good nozzles with a little spreader on the end so its almost impossible to not get a straight line assuming what you are sealing is also straight.
If you make a mistake there is a little wriggle room in order to wipe it away before it sets.....
We've refitted several kitchens in the last 5 years and never had a sealant fail yet....and again much the same with the bath sealant edging...that tends to get replaced after each tenancy not because it doesn't seal but because the tenants don't tend to clean it.
I'm not a great fan of upstands either but sometimes things go in cycles of fashion and at the moment lots of the new kitchens have them
You're certainly not going mad....30 years ago they were the thing that all kitchen fitters used.
LEJC, this is very interesting. I have some very mouldy sealant in my wetroom on the edges of the floor where the floor tiles meet the wall tiles. Tiler came to correct some glitches, noticed it had not been done and did it without telling me when the room was damp. I've tried to clean it but am worried that bleach will damage the floor tiles which don't seem to be sealed. (That's another problem!) Does your post above imply that my best bet would be to remove the sealant entirely, ensure that the room has dried out properly and then simply re-seal with clear sealant? Please and help and thank you!0 -

it is now thanks for asking, i over sleeped toilet cistern leaked 2 people never turned up for work, asda delivery never turned up then ds2 had head on crash luckily he is ok so was everyone else but his car is written . dd2 went there as he phoned as was 2 min from her house, and he was very upset and in shock police women asked him 4 times if he would go to hospital, but he said he was ok ., just glad no one was hurt x0 -
