I always use softened butter, it's the only cake I use butter in though. As everyone says, slice the top off. If it still looks dry brandy will sort it out It may be fine inside.

Message from my boss thus morning a complaint was received about me:eek:
Was my cakes dry, soup salty, was I rude to a customer .
Apparently its inappropriate to tell a customer , when they tell you a pheasant has a broken leg in the car park, and asks what to do with it. that they make a nice stew .:rotfl::rotfl:
