Discounted or fixed?

£85k remortgage, 50% LTV, repaying about £800 per month so minimum 10 years remaining - which deal would you choose and why?
1.75% discounted variable rate, linked to Skipton's SVR (not BoE rate)
1.99% 2 year fix
2.29% 3 year fix
2.56% 5 year fix
Assuming no interest rate changes, the difference between the first two deals is about £400 over the first two years, the difference between the discount and 5 year fix is about £1300 over the first two years.
Lenders don't seem at all worried about the EU vote, which is the only thing I could see that might spook interest rates upwards in the near future...
