Debt circa 40k help needed

Around 2 years ago my husband was made redundant and suffered from depression as a result so took some time to get back into employment. He now has a job he is much happier in, but with very reduced salary and is on a zero hours contract - his hours vary each week and over winter can be no work at all for a couple of months.
I have a decent job which pays well, but we couldn't cope with all the repayments when he wasn't working, so buried our head in the sand and stopped payments - wrong I know, but just couldn't face the situation.
We have 5 credit card debts totalling around 40k between us, which I'm sure have all defaulted and have now recieved County Court notices for 2 of them (Barclaycard)
I know I need to respond, but have no idea where to,start to set up,a payment plan when our income varies so much each week.
We can afford to repay around £500 per month in total but don't know how to,allocate it, or contact creditors as I'm guessing the debts have been sold on - please can someone advise where on earth to start to deal with the mess so I can start to,sleep at night again.
