Declaring part of income

Hi!
My wife and I are looking to buy our first house; I have one job and my wife has 2. Does anyone know if we are able to use all the income from my employment but only the income from one of hers (her main job). Her 2nd job is regular but the hours can change from week to week so we'd prefer not to use it to rely on for a mortgage and end up over-stretching ourselves.
Obviously if we use part of her income and declare her bank statements it means the lender would have visibility on all her finances.
Any advice gratefully received!

A lenders primary concern is that the mortgage is affordable. Declare the actual facts i.e. full income. As it will reassure rather than have a negative impact.0

We routinely only disclose the income we need to meet affordability requirements.
We don't shoot ourselves in the foot disclosing an income we would have difficulty evidencing which might delay the process.I am a mortgage broker. We didn't declare my wife's income at all. There's no need to declare it all if you don't need it to pass affordability.0
