Lemon dressing

While i was out the other day , i had a salad with what im sure was some sort of lemon dressing. I couldnt taste anything else , just the smallest hint of lemon on the lettuce leaves , no oil or anything else, but it was so subtle i cant think it was just lemon juice that had been squeezed over it ?

best way to make lemon dressing is with lemon grass.
thinly slice the lemon grass and cook out in some white wine with shallots and fresh thyme.
cook untill the lemon grass is fairly tender.
liqudise and then pass.
you can use it like that but better emulsified into an oil based dressing.

There wasn't any Sorrel in the salad was there? Its a lemony leaf and would make a non-lemony dressing taste, err, well, lemony...
