I often make a variation of this recipe

I tend not to have ricotta in, so I substitute for crème fraiche or cottage cheese, which both work well. I also adjust the proportions depending on what I have in. If you are stingy on the chorizo it can be a bit bland, in which case I add extra paprika.Shrinking my mortgage!

Or if trying to bulk it out a bit more, then I'd do a slow cooker version with cheap skinned chicken thighs, and sometimes some butternut squash depending if I've got any chunks frozen.0
