How best to help elderly parent move

We need to move an elderly (82) parent closer to us. Her home is worth around 200K. A suitable home near us will cost 300K. Could we remortgage our home to raise the 100K shortfall and we would then jointly own her property? Could we try to get a second mortgage on a new property which she could then pay us rent for from her house sale which would go towards mortgage repayments? Any other suggestions of how what might work? Thanks
