I think you're saying that he doesn't currently have a job where you're moving to? So no employment income? And will not have employment rights when he does get a job as he'll be with a new employer? So could be sacked any time in the first year for no reason? I don't think they'll take his income into account if he doesn't have a firm job offer, and maybe completed any probation period, but I may be wrong.

He doesn't have a job to go to. They have no idea what, if any job he will get, how much he will be earning etc.
The only certainty sounds like he is leaving his job following the move. That means the application would be based on just your income, as currently based on what you have said, he will, in the eyes of a mortgage lender, not have any income.
Again as above then there is the question about probation periods of any potential new job...0
