Hi!
I am after some advice and I am hoping someone will be able to help me out. I have some ropey looking bananas and I don't really want to bin them, so I thought I'd make muffins.
I have plain flour,bicarbonate but no baking soda. Is the baking soda absolutely essential? Also, I want to substitute the sugar with golden syrup - is this doable? As you can probably tell, I'm not much of a baker

You'll need to add something to react with the bicarbonate to make 'em rise. Baking Powder / Soda is a mixture of acidic and alkaline substances and they make the light, fluffy bubbly-ness. You could try lemon or orange juice to react with the bicarbonate - in theory it'd have the same effect.
I think I'd be trying to get plenty of air into the mixture as well - can you separate the eggs, mix in the yolks then whip up the whites before adding them?
I don't see why not on the syrup rather than sugar - it will change the consistency a bit - you might need a little more flour.

Hi, search simple banana bread with no baking soda. Can't put a link, but there's a recipe that also uses syrup instead of sugar. The website's called Thoughts from Alice. Hope this is useful. I have a great recipe using SR flour, if you'd like it.0

So, you want to make muffins without any of the ingredients.

While you can switch/swap some things, just expect to end up with "something similar" at the end. The something similar might be "similar enough", it might be "I'll never do that again", or it might be "something different but lovely".
