Orzo recipes please.

Hi guys,

i have a packet of Orzo lurking at the back of the cupboard. Does anyone have any good recipes for it?

I don't eat meat or cheese, but love veggies. Can i make a risotto from it?

    I've never had a packet of 'orzo', but it's basically barley - and I've often bought pearl barley. Makes a good risotto, just use any risotto recipe, maybe add a bit more liquid. Or google 'orzotto'. Barley is a good addition to soup, makes it more filling - I think you could make Scotch Broth using veggie stock and no meat. I've had barley boiled as a side with a stew instead or rice.

    I often use it instead of rice, I make a veggie jambalaya type dish using orzo also nice as a cold salad dish - I have made a few of these as lunches using internet recipes

    I used to copy the orzo pasta salad that Marks and Spencer do. Cook the orzo with a bit of turmeric, then when cool add chopped red onion, chives, tomato - anything you fancy really. Stir in a red wine vinegar dressing. I used the list of ingredients on the M&S packet to make mine, but you could use anything really.

    One of my `specialities` is a Greek dish with orzo. I use chunks of beef in it, but to be honest it`s still yummy without, I`ve done it a few times as a veggie dish. It can be a quick fix or cooked slowly depending how you feel!

    For meateaters -
    I cook the beef slowly till tender, with tomato, cinnamon, and onion, then add chopped parsley near the end, but have also taken successful shortcut using tinned stewing steak.

    For vegetarians -
    Cook and drain the pasta, add a tin of chopped tomatoes, cinnamon, lightly sauteed chopped onions, fresh or dried parsley, heat up together and put in an oven dish, sprinkle grated cheese on top, bake till cheese melts and bubbles.

    You can do it in individual size pots or one big dish, and it is great cold with salad as well.

    Btw, I`m not a fan of cinnamon, hate it in sweet dishes, but it`s essential in this one!
  • Make a soup/broth with chopped veggies/veggie stock, cook orzo in the stock. Add a squeeze of lemon and some herbs.

    Israeli orzo couscous salad was something I loved while visiting there. No recipe but I'm sure there are many on the Internet. You can just use orzo in the recipe as the couscous, while adding a more complex flavor and texture, would not be necessary to make a great salad. Or if you have a couscous or rice salad recipe that you love, just substitute orzo.
    Overprepare, then go with the flow.
