8 Year Mortgage what to go for?

We are currently mortgage free but are buying a newbuild and will probably go with HSBC. However, I've always gone with fixed rates in the past but wonder if there would be any merit with going for a lifetime tracker? (can't say I full understand being able to choose the term though).
Any advice gratefully received. We are looking at a mortgage of around £115k

Such a decision is really down to personal choice. No one knows the future direction or speed of change of interest rates.0
