 Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.
Theres no dollar sign on piece of mind
This Ive come to know...
So if you agree have a drink with me, raise your glasses for a toast

Hi there how about..
Creamy chicken n veg with pasta
Slice the chicken breast, and fry lightly, remove...
add some sliced onions n mushrooms and cook until soft, add chicken back to pan
add some sweetcorn and peas
stir in creme fraiche and a spoon of wholegrain mustard (if you have it)..season well
And when heated through serve with pasta
This is really quick and really tasty...1 chicken breast should easily do 2...-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
You could do what I'm doing tonight, which is dependant on you having a bag of tortilla chips in the cupboard! Thinly spread them on a baking tray, chop all the ingredients (having cooked the chicken first) small, sprinkle evenly over the top, I put everything on peas, to olives, veggies, jalapenos, if you have them finishing with a thin layer of cheese, stuff under the grill till melted. Surprisingly filling, but does take longer than you think it might - all that chopping small! I do have the luxury of having an avocado to make some guacamole, and half a pot of salsa, and will add some plain yogurt in the pretence that it's soured cream!0

Any salad stuff? How about start with a soup, using various vegetables and a dollop of the creme fraiche. Perhaps whiz it up if like it smooth. Then slice the chicken into slices, and toss them in some spices - I'd use cumin and coriander - and flash fry it, then serve over a bed of lettuce as a warm salad.Mortgage started on 22.5.09 : £129,600Overpayments to date: £3000June grocery challenge: 400/6000

How about sweet chilli chicken noodles? Just cook the chicken and slice it; set aside. Fry chopped onion and mushrooms and throw in the sweetcorn. Boil the noddles and drain them and then mix them with the sliced chicken and veg. Then mix some soy sauce, ketchup, dried chilli (or powder) with a splash of vinegar and a tsp of sugar or sweetner and throw over the noodles mixture. It's lovely. Sometimes I add a spring onion chopped at the end for crunch.Jane
