using up crusts & surplus sandwiches

Have two bags of crusts (removed from "posh" sandwiches) and a load of mixed sandwiches left over (currently stored in fridge) from a charity event catered for last night.
thrifty and innovative ideas please for using them up/converting them. (Not breadcrumbs - never use them!)
Was wondering whether fried bread sandwiches work? (Anybody ever tried them?)
And garlic croutons? How best to store them?
Anything else?

Bags of crusts can be 'blitzed' in a food processor and made into coating breadcrumbs for fish, chicken etc or made into a wartime cheese pudding with milk, eggs and grated cheese, I've got the recipe if you'd like it?
Leftover sandwiches (depending on what the filling is , but NOT fish ones) can either be made into a savoury bread and butter pudding, same method as the sweet pud but leave out the sugar or if they are sweet sandwiches fried gently in butter and sprinkled with sugar to make 'Poor Knights of Windsor' which is a most acceptable desert.0 -

I know you say that you never use breadcrumbs, but have you never tried making 'poor man's parmesan'? Breadcrumbs blitzed with basil or even just dried mixed herbs and fried in a pan with a little oil until golden and crispy. Absolutely amazing sprinkled over any pasta dish.
I love the idea of using sandwiches for a savoury bread and butter pudding. I never have more than one left over though. Could any sandwiches be frozen until I have enough, then make them into the pudding?Father Ted: Now concentrate this time, Dougal. These

Don't see why not, lots of folks make up a batch of sandwiches for weekday lunches and freeze them very successfully.0

Yes I think I would be tempted to dip in batter or beaten egg and fry them,failing that if possible freeze them (filling permitting)0

I probably wouldn't freeze catered sandwiches, as I wouldn't be 100% certain of the provenance, and they intended to be eaten cold. If it were HM sandwiches, or a catered vegetarian food dish that required thorough heating I wouldn't bat an eyelid.Value-for-money-for-me-puhleeze!

My freezer is jam packed with proper meals atm, but the next time I see YS wholemeal bread I shall not hesitate to over-buy and convert it (minus the egg-factor).Value-for-money-for-me-puhleeze!
