Bought too many mussels

So... I just came back from a fish market and my OH told me to buy 2 packs of mussels for tea (just 2 of us).
But now looking at it, I am sure that is 4lb (2kg)!!
So even though he says "you can never have too many mussels", I think that is too much.
Can I freeze any leftover once they are cooked to put into a paella for future or something?
Anyone freezes mussels? (I know you can buy frozen ones in the shop, but they are often quite rubbery when cooked so I don't normally buy them and have no idea what is the best way!)
Thank you

Hi
We usually buy a kilo each for the 2 of us. I know it looks a huge amount, but most of it is shell, so get that fresh bread and white wine out and enjoy

I know, I fancied them for weeks and finally made the effort to go the market.
Thank you, starving now so bet we'll probably eat them all in the end0 -
If you cook and chill the leftovers you could use with spaghetti and a tomato sauce, or in a paella,.or just eat as a snackAugust 2009 grocery challenge £172.64/,,,,,
no point in doing grocery challenges, have no money left over to eat :0/0 -
So full, and still have leftovers. Did a bit of internet searching and took them out of the shells and left them in sauce. Apparently can freeze them like that and use them other time on a pasta. Just heat the sauce separately and put them back in in the last minute just to warm them up and they shouldn't end up rubbery.. We'll see when it comes to it!0
