Apple juice ideas

Options
I have a half carton of apple juice to use up, I'm vegan, and I am all out of ideas. What recipes could I use it in?

    I use it to make carrot slaw. It works well, grate carrot and red onion and use a few table spoons of apple juice to marinade it in. The longer it soaks in the better.

    Mix a few tablespoons with soy sauce and a tea spoon of honey as a pasta dressing.

    Soak cashew nuts in it with sea salt and then roast in a dry frying pan and use as your protein source in a stir fry.

    slaw is a great idea! Shall pick up carrots tomorrow. Cashews all used up for the month and I'm on the grocery challenge with no room for luxuries.. but at top up time next month!

    I use it for loads of things:
    often preserving fruit (I know it's the wrong time of year!)
    plumping up dried fruit before it goes in any recipe,
    it also boils down to a fantastic syrup for pouring over ice cream, yoghourt, porridge etc. (and that keeps for ages in the fridge)
    it does freeze well, so you could freeze in ice cube trays and use as suggested

    It is a great replacement for milk alternatives in over night oats.

    If you have any agar-agar you could make an apple jelly.

    I have both oats and agar :)

    I have never made overnight oats though. I have both rolled and groats... do you just boil them up with the juice and pop them in a flask or a wonderbag?

    You just take a jar, add in a cup of oats, then you add in fruit juice or milk/alternative. Then throw in any you have/like. I use berries, dried fruit, peanut butter etc.
    Leave it in the fridge over night and you have a ready made breakfast :)

    I made the oats in a cheaty way using museli and they were fab - will use the rest up on that later in the week. Def. going to try the slaw and stir fry too!

    I didn't make cous cous but I did find some elbow pasta while looking so I also made macaroni pudding with apple juice, soy milk and figs - lush!
