What specifically are they allergic to?

Pedant alert - it's could have, not could of.

Thought it might of been hay fever at first, but have ruled that out so reckon it's something in her room, she wakes up in the night with itchy nose and eye rubbing, so I think it might be from the pillow,

Trying to rule things out so that was the next thing on my list

Does she have a feather pillow or duvet, as it could be that?

Or it might be a dust allergy which regularly washing the pillows/duvet/covers will help, plus hoovering the mattress when she changes the sheets. And wiping down the dust gathering bits of the bed which sometimes get missed in the general scheme of things. (I have a dust allergy which hits more at night when I've not cleaned as thoroughly as usual.)

her pillow is latex but it's quite old, duvet hollowfibre,

Sounds like it could be a dust allergy.

Have never of thought of hoovering the mattress. some good advice there, will definitely take that on board

Steam clean it too if you have one, the dust mites die when exposed to 60C or above.

I just had to buy my daughter new bedding as her hayfever now seems to be turning into an all year round allergy. She had feathers before.

I bought a pack of 2 pillows and a duvet from Sainsbury's anti-allergy range, I think it was £22 for the both of them. Her sneezing is much better now and she said they're comfy.

When one of my dogs began to show allergy symptoms, the vet recommended cotton bedding.

This is probably a good idea for humans too, as a good quality, white, cotton pillow slip can be boil washed.
