Cooking on a mini grill/oven

I'm looking for ideas of home cooked meals that can be prepped/cooked/frozen in advance in single portions that can be re-heated/cooked in a mini oven/grill.
It's the Cookworks one sold in Argos so 18l capacity (could just about roast a small/medium chicken it) and has oven/grill/toast facility.
Off the top of my head I'm thinking lasagne, shepherds pie, fish pie, moussaka but then I kinda run out of ideas. The boy isn't keen on stews unless they contain dumplings, so that's out of the question.
The only other cooking facilty he as access to is a Jetboil, so could possibly use that to cook ready-bagged frozen rice/pasta/veggies.

Sausage/chicken caserole (you can freeze it with the dumplings in)
Sausage and bean pie (beans and sausage topped with mash)
Meatballs in sauce

Enchiladas (make sure they're covered in sauce)

I think dumplings would work, if theres enough space for them to expand, or maybe make them into mini dumplings . I've seen frozen dumplings in the supermarket so Im guessing they can be frozen with the stew/ casserole or popped in to the stew part way through cooking. They might be a bit more crusty on the top than boiled dumplings but just as nice or even nicer.
I would be carefull about the Jetboil though. It's designed for outdoor use and there could be an issue with carbon monoxide poisoning. Also if he's in rented accomadation there may be something in the contract about using open flames.0
