recipe for dairy and alcohol free christmas cake.

I need to find a recipe for a christmas cake. The only problem is it needs to be dairy and alcohol free:confused:.
Any ideas would be very helpful.

    Have you thought about just replacing your normal ingredients with dairy free spread and replace the alcohol with orange juice, so instead of 4 tablespoons of brandy and port you add 5floz of orange juice.

    I have dug out my 'dairy free cookbook' and the only other cake i can find that may be useful are:-

    Spice Apple and Walnut cake

    4oz vegan margarine (dairy free)
    6oz soft brown sugar
    2 eggs beaten
    8oz plain flour
    1 level teaspoon ground mixed spice
    1 level teaspoon of cinnamon
    grated nutmeg
    2 level teaspoons of baking powder
    8oz peeled and finely chopped cooking apple
    3oz walnuts chopped
    3fl oz of oat drink

    pre-heat oven to 180C, 350F or GM4. Grease and line a deep 18cm cake tin with greaseproof paper.
    Cream marg, sugar until fluffy. Add eggs, beating well. Sift flour, spices and baking powder and stir into mixture. Fold in the chopped apples, walnuts and oak drink to make a soft dropping consistency.
    Pour mixture into tin and bake for about 1 hour. cake should be well rised and firm to the touch.

    I've never tried this one, but it is in my recipe book
    I presume vegan margarine is like a soya margarine or something like that??
