    How about some sweet recipes?

    I've got a really nice cake recipe from the back of a flour packet in South Africa.

    Nutty Chocolate Chip Cake

    1 cup plain white flour
    1 cup plain wholemeal flour
    1 tbs baking powder
    1 bag (100g) plain chocolate chips
    1/2 cup chopped walnuts
    1/3 cup desiccated coconut
    1/2 cup vegetable oil
    3/4 cup syrup
    1 tsp vanilla extract
    1/2 cup soya milk

    Sieve flours and baking powder together, mix in all the other ingredients. Pour into a greased and lined loaf tin (I think I did it in a 1lb tin - it doesn't rise too far). Bake at 180C/350F for about 40-45 minutes.

    It's really yummy. I slice it, wrap each piece individually in cling film and freeze them so they are easy to put into lunches each day.

    Parsley Soup is a good website for vegan recipes - the sticky toffee pudding is delicious.

    Also Vegan Family House has some nice recipes - lovely "cheesecakes".

    I have just started ANOTHER weight loss atempt and apart from the anilmal welfare reasons I think it will really help to be veagn.

    Frogga - I've been veggie for about 24 years and vegan for 4. Unfortunately neither has helped me to lose weight! I did stop eating wheat last year and the weight fell off quite quickly. Since starting to make my own bread though I have fallen off the wagon a bit, so I really must try it again. Good luck!
  • Bestest lentil soup recipe ever - and cheapest! (oh come on someone had to put a lentil recipe here!)

    6 oz red lentils rinsed and drained (or if you are a scutter just shove em in the pan)
    1 onion chopped - large if you really like onion
    1 litre of water
    2 knorr veggie stock cubes
    1 tsp of any oil (to stop the froth from rising too much in the pressure cooker)

    slosh it all in a pressure cooker and cook for 10 mins on high and voila! Four hearty servings. Crusty bread/ garlic croots mmmmmmmm.

    No pressure cooker - simmer for an hour but that is just a daft waste of money surely? Freezes well.
  • When I make flapjacks I always use black treacle in the recipe instead of golden syrup - makes em taste like treacle toffee mmmmmmmm.

    Hi everyone.

    I've been vegan for about 18 months & am LOVING how it makes me feel although it can sometimes be difficult when eating out.

    I use this http://www.parsleysoup.co.uk/ website a lot especially for her cake & biscuit recipies. When I bake for friends they never cease to be amazed that it's vegan food.

    Last night I made vegan pizza which is one of my favourite meals. I make the dough in the breadmaker just like making bread -
    3 cups flour
    1 1/4 cups water
    2 tbsp olive oil
    2 tsps each of salt & caster sugar
    a packet of quick acting yeast.

    For the topping I fry an onion & some garlic & chop & add whatever veggies I have in the fridge. Last night it was peppers, mushrooms & courgettes. I added some chopped up sun dried tomatoes & olives then a tin of chopped tomatoes & a good squeeze of tomato puree. I cook this mixture very slowly for at least 1/2 hour til it's lovely & thick.

    The dough makes enough for either 2 large pizzas or one pizza & some nice ciabatta to go with it. It's best if, after you've put the dough on the baking sheet (I use one with holes in as it makes it lovely & crispy) you pop it into the fridge for an hour before spreading on the topping & baking for about 20 minutes.

    I put grated cheese on half of it for my DH & I eat mine without. You can buy vegan cheese to go on the top if you want but I like it without.

    My DH is a commited meat eater & isn't a pizza fan but he loves this & it's VERY cheap.

    Her recipes are really good aren't they? Have you tried her sticky toffee pudding? It's absolutely delicious!

    The website I recommendedhttp://www.parsleysoup.co.uk/ has a couple of carrot cake recipies - one lower fat & one indilegent one - both well worth trying.

    Chickpea and Coriander Curry
    Fry 1 large onion in oil until softened. Add 2 tsp curry paste and a squirt of tom puree plus a can of chickpeas and 1/2 a tin of plum toms. Cook through until all chickpeas are warmed through. Add half a can of coconut milk and bring to boil until sauce has reduced and thickened. Throw in a generous handful of chopped fresh coriander just before serving. I serve mine with naan bread [sorry don't know whether this would be vegan] or you could serve with rice instead.
