Hi guys
I've chopped up a load of carrot and swede that my SD dropped off for me ... I'm going to make soup with some but I was hoping to freeze half. Can I freeze it ok raw and will it cook ok when I take it back out ?
Seems a shame to waste half as it was starting to go pretty ropey

They both work well in roasted root veggies which freeze really well.0

I make up carrot and swede mash and freeze in an oven proof dish. Makes a great extra side dish with a roast with no hassle on the day. I generally defrost (never tried reheating from frozen) and then put it in the oven with grated cheese on top. Yummy!0

Hi,
I make up little bags veg, soup mix, (carrot, turnip, parsnip, onion), and freeze them raw, don't bother to blanche them.
Saves time when making the soup, though I put them into the hot stock from frozen.
I found that leaving them out to defrost the night before meant that when cooked they were rubbery.
Edit: I'm always on lookout for any 'yellow stickers', veg and freeze that.0 -

I find that they freeze better when cooked, but it also depends on how long you freeze them for.
Lurking at the bottom of the freezer for several months won't enhance them at all, but they'll be OK if you are moving them through fairly quickly.
I prefer to cook extra, then freeze it - just the way our family meals work, it saves me time.0 -
Thanks guys I will be using them in the next week or so so should be ok .. They will be going in a chunky veg soup.
My dad will be coming home on Sunday with more veg but it will need to last me for two weeks ... Was going to get extra cauli but not sure how long it would last in the fridge

Hi - jus dropping in to say that I too freeze mashed together carrot and swede and microwave it back to life from frozen - really yummy when mashed together.
maman - when you say 'oven proof dish' do you mean pyrex type or metal. Also do you let the carrot and swede mash in dish thaw before putting in oven?
