the trick with portions is to pot the rest up into containers straight away so it immediately starts to cool and then you are less tempted to go back for seconds. We find that the small Chinese takeaway pots do 1 person and the large ones (from noodles/fried rice) do 2.
Because I am a bit anal I like to make all the portions for freezing equal and that dictates what gets left to be eaten immediately.

These are what I use, and I make lasagne, curries, chilli, cottage pie (with the mash topping )

Usually a large square lasagne dish will do at least half a dozen portions . The take-away boxes wash out fine, and can be used again and again. They also stack pretty well in the freezer.

I look after three of my grandsons after school every day so I often don't get home until gone 6.30 at night. What I am having for my evening meal is usually taken from the freezer in the morning, and stashed in the fridge to defrost. Then its a quick blast in the microwave while perhaps the veg is being steamed, before eating

I never fancy standing cooking in the evening when I get home so I have a big cook upon a Saturday or Sunday morning to stock up the freezer with ready-to-eat almost meals as they only need reheating
