Fig recipes?

My partners boss has sent me a big bag of fresh figs from his tree-they are pretty rip and squidgy (sp?) and I wondered if anyone had some nice recipes for them? I was hoping for a tart or cake type thing?? I have found a cheesecake recipe but its for dried figs and think the fresh ones might be too moist to use :(

Any help guys?

  • There's a nice indian milkshake that I learnt about recently....it's made with Cashew nuts (natural ones) and figs, with a little sugar and some cream.

    All you do is blend the cashews, figs, milk and cream with sugar until pulpy and serve with crushed ice.

    Depending on how think you leave it, you could add ice cream instead of cream and serve as a dessert.

    Mmmmmm....... Fig Jam :j

    • 2 Lemons
    • 500ml water
    • 2 vanilla pods
    • 2 cinnamon sticks
    • 2.5 cm fresh root ginger, peeled
    • 1.5kg Sugar
    • 1.5kg ripe figs


    1. Slice the lemons in half and squeeze out the juice from each half.

    2. Place the squeezed lemon halves together with the lemon juice in a large preserving pan.

    3. Add the water, vanilla pods, cinnamon sticks, ginger and sugar.

    4. Add the figs and bring to the boil.

    5. Reduce the heat and simmer for at least an hour, stirring from time to time, until the mixture has thickened and become translucent.

    6. Remove the lemon halves, vanilla pods, cinnamon sticks and ginger.

    7. Spoon the hot jam into warm, clean jars, cover with wax discs, allow to cool, then cover with cellophane or jam jar lids.

    baked figs with honey & mascarpone

    Heat oven to Gas 5
    Cut each fig in a cross on pointy end
    put flat end into a baking tray
    drizzle with honey
    bake for 15-20m
    serve with a blob of mascarpone

    Slice them on ciabatta or just crusty bread with brie and grill them. (Grill the reverse side first!)
