what to do with glace cherries and pineapple and loads of dried friuts ?

my dad bought a load of glace cherries and what looks like glace pineapple slices for me along with an assortment of dried fruits (apple with cinamon, cranberry and coconut, banana and coconut chunks) and desiccated coconut ?
im not sure what to do with them .. was hoping to incorporate into some kind of cake but not sure what ?
ive only really just started baking but I have most stuff in my stores ?
I also have loads of vermincilli ( something like that .. the little chocolate strand things ) and dried currents ?


any ideas would be great as it will keep the boys happy and hopefully save me a couple of pounds on after dinner desserts ;)

    If you do a basic cake/bun mix (1egg, 50g sugar, 50g butter, 50g SR flour multiplied up to the quantity you want) you can add pretty much anything to it. Some things work better than others, and big lumps can sink, but it will all taste good, and kids aren't that bothered if it looks good. If anything turns out too bad, just serve with custard.


    When I make buns I make a batch of plain mixture, then divide it in to different bowls and add a different flavour/dried fruit/etc to each, and then put it in the bun cases and bake.


    With the chocolate sprinkles, make up a simple glace icing (icing sugar and water, add the water very gradually), drizzle over the buns, then add the sprinkles

  • You could make a pineapple upside down cake and add some cherries and the other stuff could go into fruit loavrd
    I was jumping to conclusions and one of them jumped back

    What about some sort of non-cook tray bake ?

    I'm thinking something like this,

    substituting the rich tea biscuits and marshmallows with chopped glace cherries and pineapple, and dried fruits ?

    If the dried fruits are really dry and shrivelled, try soaking them in water or orange juice to plump them up a bit

    Basic sponge mixture - mix and match fruit
    Pineapple upside down cake
    ChristMas cake mix

    Away from cake idea - fruity Icecream - use vanilla - allow to soften slightly add fruit mix and refreeze - could do smaller portions - apple and cinammon - pineapple and cherry xx

  • oh ice cream .. never even thought of that .. ive got a fair few tubs in the freezer that I got whoopsied a while ago so could help clear the freezer a bit too .. yay

    On another tack, you could try fruit compote. I do this and serve with greek yogurt at breakfast.

    Slice up your dried fruit then soak in enough Earl Grey tea to cover them, with some cinnamon stirred in. Soak for about an hour, then reduce on the hob until the liquid has almost gone (keep an eye on it, I let one lot boil dry!).

    You could serve this with icecream.

    You could soak a batch of mixed dried fruits in brandy for 24 hours then make a rich fruit cake with it.

    Or, make a base with crushed digestive biscuits and butter, arrange dried fruits and nuts on top then pour over a tin of condensed milk. Bake at 170 degrees for around 25 minutes then leave to cool. Once cool, cut into squares. Extremely decadent!
