Afternoon folks

Have done my first plan for February...can't believe I'm still using up food from freezer, have so many new things I want to try but this needs doing first.

So:

Lunches - assorted sandwiches

Dinners -

S - pork, stuffing, veg, potatoes, gravy
M - sweet potato hash with egg
T - turkey stew & veg
W - sweetcorn fritters
T - chilli & rice
F - fish cake & chips
S - breaded chicken & savoury rice

Everything except egg, gravy, rice & fritter mix will be coming out of the freezer :T

    This week

    Today - chicken enchiladas
Mon - Pizza or tuna pasta (choice, both HM in freezer)
    Tues - Nasi goreng
Wed - Salmon in chilli (fr), savoury rice, frozen veg
Thurs - HM turkey burgers (fr), potato wedges, onion rings (fr)
Fri - Fish & chips (fr)
Sat - Spaghetti bolognese (sauce fr), garlic bread
Sun - slow cooked brisket with roast pots etc (all fr)

Aiming to run down the contents of the freezer more, there is some space appearing, would like to defrost one of the 3 by the end of the month.

Kids now have the chance to request meals for the menu, max 1 per week each and I try to fill the rest with freezer meals, this week the requests were nasi goreng and fish & chips and one is from the freezer - bonus!
  • I just had a check of my bank balance and did a little shocked face, haven't been as on top of things as I'd like this weekend! Need to keep things lean this week, so...

Breakfasts: overnight oats for me, porridge fingers & fruit for the baby, OH can sort himself :D (but usually porridge)

    Lunches:
I'm going to make this lentil, tomato, sausage & cavolo nero recipe for Tuesday and Wednesday: http://www.nzherald.co.nz/lifestyle/news/article.cfm?c_id=6&objectid=11196058 (I've got two sausages and some cavolo nero in the fridge that need eating, so that's pretty perfect!)
Thursday: at home with the baby, so we'll likely have cheese sandwiches and fruit
    Friday: leftovers from Thursday tea

    Teas:
Mon: veg fajitas (packet mix in cupboard)
Tues: spaghetti & turkey meatballs & garlic bread
    Weds: pizza
    Thurs: Jack Monroe's gigantes plaki
    Fri: leftovers frittata

And then the weekend will no doubt be a law unto itself...

Had to google the gigantes plaki and so pleased I did, I have been looking for new ideas to have on meat free days. Have you made these before?
