Salmon portions

Has anyone else noticed that salmon portions these days seems to be very moist and squidgy, particularly if pre-packed. I started looking at the calories per 100g, they vary a lot. Presumably the lower calorie versions have been injected with water, but what else? Are whole fish less likely to have been adulterated? Anybody know? Do any of the supermarkets sell a product that tastes and cooks like it used to, before omega 3 was fashionable?

I always buy a whole salmon and fillet it and portion it myself.

Where do you buy your salmon from? Maybe the places you buy them from don't stock the good quality salmon? If you want quality you have to pay more for it. I bought some of the 'taste the difference' salmon and it lived up to its name! It's also higher in protein and lower in fat than the regular salmon!
